My main internship project was a Slack bot for signing up and being notified of changelogs of deployments in any environment. This required in-depth use of the Slack API, the APIs of numerous internal services, and an express web server for handling the requests. At the end of my internship, the bot had tens of users (primarily managers) and was handling hundreds to thousands of notifications per day.
